Easy Zucchini Bread

Earlier this month, my mom and I decided to try out a new zucchini bread recipe that I couldn't wait to share with all of you. This bread is so unique because it is completely eggless, but you can't tell at all. It is absolutely mouthwatering and I love having it as a snack. Following these steps, you'll have a scrumptious loaf in no time!

Note: This recipe is for two loaves, but feel free to adjust the ingredients as necessary.

Overall Time: 80 mins.

Ingredients

2 cups shredded zucchini
3/4 cup plain yogurt
3/4 cup vegetable oil
2 1/4 teaspoons vanilla
3 cups flour
2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 1/4 teaspoons cinnamon
3/4 teaspoon nutmeg


Directions

  • Preheat the oven to 350 degrees Fahrenheit
  • Grease the bottoms of your loaf pans
  • Mix yogurt and sugar in a bowl until creamy
  • Add and mix in vegetable oil
  • Thoroughly stir in zucchini and vanilla
  • Mix the six dry ingredients in a separate bowl
  • Add the mixture to wet ingredients gradually until blended together
  • Pour batter evenly into pans
  • Bake for 1 hour

Remember that the process can be tweaked to your liking (I didn't include walnuts because I'm allergic!). It is a simple but tasty recipe that is sure to impress. If you try it out, make sure to let me know! What is your favorite summer recipe?

  13. Mmmm, sounds delicious! I love zucchini bread, and we have a few zucchini plants in the garden -- I could make a lot of loaves with all of that squash! :) One thing I like to make with summer produce is pizza with fresh tomato slices (no sauce!), fresh basil leaves, and lots of cheese.
